It’s the start of the new year and if you’re like me, you’ve been in the kitchen a lot these past months. Also, if you’re like me, you’re working remotely from home. This means more weeknight dinners and meal preps. Having a toddler at home with me all day has forced me to get creative with my time. The last thing I want to do after 7 hours worth of zoom meetings is cook! That being said I’ve compiled a list of six allergy-friendly weeknight meal ideas that have helped me get over the hump. These weeknight meals are soy, gluten, egg, dairy, and nut-free.
These quick and easy weeknight dinners can be made in advance. Additionally, any leftovers can be stored in the freezer and pulled out on evenings where cooking is simply not an option. Did I mention that these weeknight meals are kid-friendly? Although I only have a 2-year-old kid, I would imagine if she likes them so will your kids!
