It’s the start of the new year and if you’re like me, you’ve been in the kitchen a lot these past months. Also, if you’re like me, you’re working remotely from home. This means more weeknight dinners and meal preps. Having a toddler at home with me all day has forced me to get creative with my time. The last thing I want to do after  7 hours worth of zoom meetings is cook! That being said I’ve compiled a list of six allergy-friendly weeknight meal ideas that have helped me get over the hump. These weeknight meals are soy, gluten, egg, dairy, and nut-free.

These quick and easy weeknight dinners can be made in advance. Although I only have a 2-year-old kid, I would imagine if she likes them so will your kids!
