These delicious gluten-free, vegan raspberry jam oatmeal bars are one of my husband’s favorite desserts. These oat bars can also be made using fresh raspberries, raspberry marmalade, or any sweet berries that you like. Your family will never guess that these fruit-filled raspberry oatmeal bars are low in sugar and made with allergy-friendly ingredients.

Gluten-Free Raspberry Jam Oatmeal Bars
Gluten-free oatmeal is a staple in our home. I use it in my oat bar recipes, like my apricot crumble and peach crisps. I also eat it for breakfast, like ordinary people. These delicious oatmeal bars are made using raspberry jam but are just as delicious with fresh raspberries or raspberry marmalade. I don’t suggest using jelly simply because it might make the dessert too sweet and not hold together, as well as its “thicker” cousin.
Although this recipe is gluten-free, it can easily be adapted to conform to a non-allergy-free lifestyle by adding butter and all-purpose flour. However, you decide to make it, know that it’s going to be downright tasty!
What you will need to make Raspberry Jam Oatmeal Bars
The crust and topping for these oat bars are made of the same five ingredients.
- Raspberry Jam or Marmalade – You can also use any fruit filling or fresh fruit you’d like. Check out this recipe for the perfect strawberry filling!
- Coconut and Gluten-Free flour – You’ll notice that I use Bob’s Red Mill baking flour a lot. I’m not ashamed to share that I haven’t mastered gluten-free flour yet. Coconut flour is my second flour of choice when baking. It adds a touch of sweetness to my desserts.
- Plant-Based butter– I only use Melt and Earth Balance vegan butter. Specifically the soy-free versions.
- Gluten-free Rolled Oats – I swear by these oats because they are certified gluten-free. No questions!
- Brown Sugar – I prefer dark brown sugar in most recipes. It adds a hint of sweetness. To create raspberry oatmeal bars that have less sugar, you can substitute organic coconut sugar.
- Cinnamon – A small amount of cinnamon goes a long way. Although this recipe calls for only cinnamon, feel free to add a dash of nutmeg to your topping as well.
How to make Raspberry Jam Oat Bars
Preheat Over to 350° and spray a small pyrex or square baking pan with non-stick cooking spray.
Oat Crust & Topping
- In the work bowl of a food processor or working by hand with a pastry cutter or two forks, combine the rolled oats, brown sugar, cinnamon, flour, and salt.
- Add butter and pulse (10-15x) or cut with a pastry cutter or forks if using hands until the mixture is crumbly.
- Press half of the mixture into the bottom of the baking dish and bake for 10-15 minutes, until golden brown.
- Remove from oven and spread raspberry jam evenly over the crust. Add remaining oatmeal topping over raspberry jam.
- Return to oven for 20 minutes and bake until top fruit is bubbling and topping golden brown.
- Remove from oven and allow to cool for 5 minutes.
Raspberry Jam vs. Fresh Raspberries
My husband and I are still working to determine what fresh fruits trigger Emory’s eczema. Thus far, we’ve noticed a reaction to seeded fruits like strawberries and kiwi. Starting with a raspberry jam just seemed safer. She’s had no reactions this far.

How to make your Fresh Fruit Compote
Making your fresh fruit compote is easy! Simply add your choice of berry, lemon juice, honey, salt, and water to a saucepan. Bring to a boil, then reduce heat to medium-low, cover, and cook for 10 – 15 minutes, continually stirring until the berries have popped and the sauce has thickened and reduced. If the sauce is still thin, continue to cook for 5 minutes until the desired consistency is reached.

I don’t follow an allergy-free diet, but I made these bars as instructed because I always want to make the original recipe the first time through. I don’t think I’ll ever adapt it, though, because they were perfect as is. I might be biased as raspberries are my favorite fruit.
