Simply delicious gluten-free raspberry jam oatmeal bars made with raspberry jam preserves, coconut flour, brown sugar, and gluten-free oats. These bars are low in sugar and made to be enjoyed by everyone!
Preheat Over to 350° and spray small pyrex or square baking pan with non-stick cooking spray.
Oat Crust & Topping
In the work bowl of a food processor, or working by hand with a pastry cutter, or two forks, combine the rolled oats, brown sugar, cinnamon, flour, and salt. Add butter and pulse (10-15x) or cut with pastry cutter or forks if using hands until the mixture is crumbly.
Press half of the mixture into the bottom of the baking dish and bake for 10-15 minutes, until golden brown.
Remove from oven and spread raspberry jam evenly over the crust. Add remaining oatmeal topping over raspberry jam.
Return to oven for 20 minutes and bake until top fruit is bubbling and topping golden brown. Remove from oven and allow to cool 5 minutes.
