Emory loves homemade bread. Given her food allergies, homemade bread is the only bread she can eat. When we have bananas on the verge of spoiling, I usually make this quick and easy vegan gluten-free banana bread for her.  This vegan banana bread is very easy to make. It takes roughly 5 minutes to prep and 45 to 50 minutes in the oven. Miss Emory could have eaten this entire loaf herself if we’d let her. Seeing her munching away on something I’d made for her felt so good; knowing that it was safe to consume and a little healthy (because, bananas), we let her eat three little slices as soon as the bread came out of the oven.

Vegan gluten-free banana bread ingredients

  • 3-4 very ripe bananas
  • Gluten-free flour
  • Vanilla Extract
  • Ground Cinnamon
  • Granulated Sugar
  • Brown sugar
  • Baking Soda
  • Oil
  • Salt

How to make vegan, gluten-free banana bread

  1. Preheat the oven to 350°F
  2. Line a loaf pan with Parchment paper.
  3. Mash 3-4 ripe bananas with a fork or potato masher
  4. Add vanilla, oil, cinnamon, granulated,  and brown sugar to bananas. Mix well.
  5. Sprinkle banana mixture with gluten-free flour, baking soda, and salt. Mix all together. The bread batter will be thick.
  6. Slowly pour batter into a lined loaf pan.
  7. Bake for 45-50 minutes.
  8. Allow cooling for 10 minutes.

Moisture is key when it comes to banana bread, and the ratio of flour to banana makes all the difference. If you use too much flour, you’ll end up with dry bread. If you don’t use enough, your bread will be too wet. The secret is actually in how you measure the flour.

I highly suggest using bananas that have brown skin.  Super ripe bananas that you possibly wouldn’t eat are best.  Not only do they act as the binder in your bread, but they also add sweetness and flavor.

A good-quality gluten-free all-purpose flour blend made of lighter flours/starches (such as rice flour, tapioca starch, corn starch, or potato starch) ensures a fluffier and lighter final texture. Ingredients
  

  • 3-4 ripe bananas
  • 2 cups gluten-free flour
  • ⅓ cup oil your preference
  • cup granulated sugar
  • cup dark brown sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tsp cinnamon 
  • 1 tsp salt

Instructions
 

  • Preheat the oven to 350°F
  • Line a loaf pan with Parchment paper.
  • Mash 3-4 ripe bananas with a fork or potato masher
  • Add vanilla, oil, cinnamon, granulated,  and brown sugar to bananas. Mix well.

  • Slowly pour (or spoon) batter into a lined loaf pan.
  • Sprinkle top with brown sugar for an added crunch
  • Bake for 45-50 minutes. Allow cooling for 10 minutes

Notes

STORAGE INSTRUCTIONS:
Bread can remain in the refrigerator for 3 days.
TO FREEZE - Wrap load in saran wrap and foil. Freeze for up to 4 weeks. Unthaw at room temp on the countertop before serving.
