“Game Day Gear Up” featuring Houston Chef Bryan Caswell

Macy’s Culinary Council (MCC) is made up of expert chefs from around the country, who are dedicated to inspiring you to eat, cook and enjoy food at home – just like a chef. The MCC includes some of the nation’s leading culinary masters like Rick Bayless, Michelle Bernstein, Cat Cora, Tom Douglas, Todd English, Marc Forgione, Emeril Lagasse, Marcus Samuelsson, Tim Scott, Nancy Silverton, Ming Tsai, Wolfgang Puck and Takashi Yagihashi. Launched in 2003, this distinguished team provides expert culinary advice and leads in-store cooking demos to teach customers how to bring a little gourmet to their dining table.

In Honor of Superbowl LI, Macy’s Culinary Council invited Houston Chef Bryan Caswell to gear folks up for the big game. Bryan, Owner and Executive Chef of REEF talked with an eager crowd of hungry food enthusiasts about his favorite game day dishes and where to purchase the best fish in Houston. REEF is one of Houston’s premier seafood restaurants. Named no.1 seafood restaurant in the US by Bon Appetit Magazine. Chef Caswell tantalized our taste buds with succulent cuts of fish and savory gumbo as part of his game day demonstration.  Chef’s game day gear up menu consisted of three recipes. The preparation looked simple to create, but I’m sure I’d find a way to totally destroy “all tree of dem.”

Originally from Lafayette, Chef Caswell talked about the variance of gumbo roux across the state. Typically, southern roux is “bottom of your show, dark.” Which I am assuming is reminiscent to the color of mud or dirt. Chef’s “Buck Shot” gumbo was deep, dark and flavorful. I pridefully slurped the remaining juice from my bowl!
